I have an easy recipe for you today. This was a go to recipe for Mark and I when we both lived in Indianapolis. Stuffed peppers! The stuffing possibilities are endless, which is why I love making them. You can really cater the flavors to whoever you are cooking for. I would have to say that stuffed peppers are one of my favorite dishes to make. Not only do they have a short ingredient list (and you usually have the ingredients on hand) but I love that no matter how many times I make stuffed peppers they always turn out a bit different each time! Thats whats so great about them!
These particular stuffed peppers I made a few nights ago for my parents and I. I had fully intended on sharing a curry dish with you but it got the "that was filling (how my Grandpa Wolfe declares he didn't like dinner" from the Wolfe Family. So instead I have stuffed peppers two ways!
Stuffed Peppers Two Ways: For the meat lover and the vegetable lover
Serves 3
What you will need:
1/2 Pound Ground Beef
1/2 Cup Bulgar
Two 1/2 Inch Slices of Polenta (For vegetarian Option)
1 Cup Tomato Sauce (I used Tomato and Basil)
1/4 Cup Chopped Onion
3 Bell Peppers any color works I always prefer red bell peppers
Cheese to top your pepper with
Pepper, Garlic, and Extra Basil to taste
Here is what you do:
Cut the tops off your peppers and clean out the seeds, set peppers aside while you work on the filling.
Start browning your ground beef and cook the bulgar according to the package directions.
In a small skillet sprayed with cooking spray cook your onions until soft and translucent.
Now add your Tomato Sauce and simmer for another 5 minutes.
At this point your bulgar will be done cooking. Mix your Bulgar in with your tomato sauce and onion.
Alright here comes the stuff peppers two ways. Since I was stuffing three peppers and two of the peppers were with ground beef I mixed 1/3 of the tomato/bulgar mixture with the ground beef.
The rest of the tomato/bulgar mixture was added to the chopped polenta.
Now stuff each peppers till completely filled, and top with cheese if desired (I used parmesan).
Place peppers in a 350 degree oven for 30 minutes. Or until peppers start to slump, and are soft.
Other possible fillings:
Feta, Artichoke hearts, sun dried tomatoes and orzo-Mediteranian
Ground Turkey, or beans if you prefer
Mushrooms are also very good in stuffed peppers
Experiment with different vegetables and sauces you enjoy!
