I wanted to share this quote with you before jumping into my post this evening! I had a pretty uneventful Sunday! Church, Brunch, Errands, A run (which I masted a enormous hill!) and making dinner! Before we talk about diner I just want to take a second to talk about how enormous this hill really is!
You see I live in a neighborhood which is at the top of a huge hill. For those of you who have ever been to my house in Minnesota you know exactly how big of a hill I am talking about!
This is just the beginning of the hill, the hill winds up for a little less then a mile!
This hill (Mayowood Road) is feared by many in the winter time because of how windy it is, and many cars have been known to do this
in the winter when going a wee bit to fast around the turns!
Anyways the last time I ran this hill I had to stop part way, but today I made it the whole way up without stopping! Woo Hoo! I defeated the hill!
Now lets talk about dinner! We had a great variety of summer salads tonight! I made a delicious bean and rice salad from this recipe! The salad was fresh, and full of flavor! I also made a lentil salad, I will share that recipe with you tomorrow! I have a feeling the lentil salad will be delicious tomorrow after all the flavors mingle and meld together, and I can't wait to share that recipe with you. But I am going to share pictures of the rice and bean salad with you!
What you will need:
Salsa Black Beans and Rice Salad
2 Cups Cooked Brown Rice (cooled)
1-15 Ounce Can Black Beans (we were out of black beans so I used White Kidney Beans)
2 Cups Tomatoes Chopped (I used Cherry Tomatoes)
1 Cup Red Pepper
1 Cup Corn
2 Scallions Thinly Chopped
Cilantro
1 Cup Salsa
Lettuce Leaves
I left out the cheese and sour cream!
Since the rice has to cook and have time to chill, start cooking the rice according to the package directions. I used 1 cup of dry rice.
The next step is easy! Chop up all your veggies,
Add your Salsa,
your beans
and stir to combine everything.
When my rice was done cooking I added the rice to the salsa, veggies and beans.
I mixed everything together, and placed the salad in the fridge to chill until dinner!
That is one fresh dinner! I served grilled chicken on the side, with strawberries and a green leaf salad!
Very colorful and fresh! A perfect dinner to enjoy on a wonderful breezy summer night! The weather was perfect for enjoying dinner outside on the deck.
On another note I really miss this guy!
In less then a month I get to see Mark! Not that I am counting down or anything, wait who am I kidding I have been counting down the days since I got back to Minnesota! We talk on a daily basis, but it is just not the same as being face to face. Like they always say absence makes the heart grow fonder!
