An Off Button for My Brain!

Do you ever have those nights where your mind just will not shut off?   You seem to jump from one worry to the next as you toss and turn and try to get comfortable?  Well that is exactly the type of night I had last night.  I tossed and turned until at least 3 in the morning, yes 3 am!  I had to be up at 5:15, needless to say I am not on my A game today.  I have a feeling I know why I could not fall asleep this is my last week of work at my job, I do not have another job lined up, I am anxious to see how this interview goes today, and on top of that I am anxious to see where Mark and I will end up (and if we will even end up in the same state)!  See why I had a tough time sleeping?  Around midnight last night I opted to throw a movie into my lap top.   I opted for this one,
Mark and I had watched some of You've Got Mail and I seriously wanted to watch it again!  I forgot ow much I loved that movie!  However the movie did not help with falling asleep, I stayed up and watched the whole thing.  While we are on the topics of movies do you remember the book Mr Poppers Penguins?  Well guess what they are making Mr Poppers Penguins into a movie!  I was giddy and excited when I saw the preview for Mr Poppers Penguins and declared to Mark that we HAD to see the movie when it came out!  He agreed and said we also needed to see the Hangover Two, which I readily agreed too!

I know I shared with you last night the recipe for the new baked oatmeal which can be found here!  But today as promised I want to share with you the new cookie I am completely obsessed with (and the ones I made for my meeting tonight)!  Not only is this cookie on the healthier side, but this cookie is jam packed with tons of flavor!  
You see when I was home last we were having a little dinner party, and we decided on homemade cookies and ice cream for dessert. One problem the cookies could not include any of this, 
Why you ask?  Because my mom and I had both given up chocolate for lent!  For some odd reason I was craving Oatmeal Cookies, but was not in the mood for the typical oatmeal raison cookie.  This is when I commenced find a not boring, healthy, tasty, out of this world oatmeal cookie.  Thats when I stumbled upon this Taste of Home Recipe.  Spiced Cranberry Oatmeal Cookies, the name alone sounded promising, and the recipe used applesauce instead of oil score!  Only downfall the recipe called for chocolate chips there is a bummer!  However to make these cookies lent friendly to my mom and I, I simply subbed in white chocolate chips!  You know technically white chocolate is not chocolate because it is not made from any part of the cocoa bean!  My mom and I both agreed that the raw dough (without egg) was just as good as eating the cookie!  These cookies are best enjoyed fresh out of the oven when the white chocolate chips are nice and melty!

Here is what you will need:
1/2 Cup Butter Softened
3/4 Cup Brown Sugar
1/4 Cup Sugar Substitute
3/4 Cup unsweetened applesauce
1 Egg
1 Teaspoon Vanilla
3 Cups Old Fashioned Oats
1 3/4 Cups All Purpose Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Ground Nutmeg
1 1/2 Teaspoon Cinnamon 
1 Cup Dried Cranberries
1/2 Cup White Chocolate Chips 

Here is what you do:
In a large bowl beat the butter, brown sugar, and sugar substitute together, 

Next add your egg, vanilla and applesauce, 
Yes it is normal for your mixture to appear curdled like this, 
Combine the remaining ingredients in a separate bowl and mix well(oats, flour, baking powder, nutmeg and cinnamon), 

Now start slowly add your dry ingredients into your sugar and butter mixture!
Add your White Chocolate Chips, and Cranberries, 
And mix well to combine!
Now time to bake these cookies will bake for 10-12 minute in a 350 degree oven!  I used a teaspoon and simply drop the teaspoon of dough on the cookie pan!
Your finished result, 
Delicious!
