It is not Goodbye just See You Soon!

We had a wonderful dinner tonight at PF Chang to celebrate the upcoming graduation of our pharmacy friends.  I am so proud of all of you!  This time of year is very bittersweet for us as a group of friends.  We are celebrating the wonderful accomplishments of friends graduating, and at the same time we are saying see you soon as everyone moves on to a new phase in life!

I can safely say that I will be sad to watch everyone leave Indianapolis.  We have had a lot of good memories here over the past six years.  One thing I love about my group of friends here in Indy is how close we have stayed after graduating from Butler.  We still get together for dinners, birthdays, random television shows and everything in between.  

While I am sad to see people move (I am even moving) I am also very proud of all my friends!  Congratulations to all of you on completing Pharmacy School.  Also congratulations to my friends graduating with their under grad degrees!  I am looking forward to celebrating with you all this weekend.  And believe me this is not the end of all our crazy stories, we maybe moving but there is more fun to have had!

Now lets talk about the food we enjoyed tonight!  For dinner I had Pf Chang Veggie Fried Rice, and I have tons of left overs!  The veggies in the rice were so fresh, and I had huge chunks of broccoli in the mix (sorry for no picture, I felt a little creepy pulling out a camera in the middle of dinner)!  However the food wasn't the best part of dinner.  Our conversations were, and I know that sounds cheesy, but we always have a hoot when we go to dinner!  We were all pretty much in the same frame of mind when it came to dessert.  We all agreed to go to Huddles for frozen yogurt and lets just say I was in heaven.  Not only did they have peanut butter frozen yogurt!!!!  They also had red velvet, cake batter, and the most amazing chocolate frozen yogurt!  I seriously almost died from excitement when I loaded my bowl with a little peanut butter, a lot of cake batter, a smidgen of red velvet, and a dollop of chocolate.  I then topped my very colorful bowl with a hunk of red velvet cake, and raspberries!  Amazing!

I decided to be a dork and take a picture of all our yogurt creations!


I have found my new favorite frozen yogurt place!  If you live in Indianapolis and have not been to huddles on 86th street you need to go, there are no if's and's or buts about that!   I would suggest going right now but they closed about 20 minutes ago!

Anyways I can safely say that tonight was totally worth staying up past my 9pm bedtime (I know I am a slight grandma)!  Thank you ladies for a wonderful night, and Congrats to all my graduates!




One Little Fib

So remember yesterday when I told you I thought I would have no problem eating minestrone soup all week?  Well that was a bit of a fib because in all honesty soup just did not sound appealing to me this afternoon after a sweaty workout.  In fact this is what I had for lunch, 

Yes my friends that is gorgeous black bean salad, studded with some of the freshest veggies I had in my fridge.  I also was craving another orange after yesterdays perfectly sweet and juicy one!

This lunch was oh so easy to prepare and exactly what I was hungry for.  That is the nice thing about my work schedule.  I do not have to worry if by lunch time I will like what I packed!  I get to make a fresh lunch every afternoon!

Here is what I used:

Fresh Cumin and Black Bean Salad
For Salad:
1 Small Orange Pepper
2 Tablespoons of chopped onion
10 grape Tomatoes 
1/2 Cup Black Beans 

For Dressing
2 Teaspoons Olive Oil 
1 Teaspoon Dijon Mustard
Pepper, Cumin, and Cayenne Pepper to taste

Start by cutting your veggies and putting them in your serving bowl.
Next drain your beans, measure out one heaping 1/2 cup of black beans and dump on top of your veggies.


Now stir so that the veggies and beans are nice and mixed together.
Now start working on your dressing.  In a small bowl whisk together your olive oil, dijon mustard and spices till they are nicely incorporated.
Last and final step, pour your dressing right on top of the salad and mix till everything is evenly covered!

Now sit back and enjoy your wonderfully fresh salad for one!  I loved the flavors of the dressing.  They all worked incredibly well together.  I love the flavor combination of black beans and cumin.  The dijon mustard was a nice touch, it added a little zip much like a vinegar would!

I am not sure what I am going to do the rest of the afternoon.  My to do list is pretty long including look for jobs, cleaning my room, and a million other things.  I want to get everything done but in all honesty I am still pretty tired from not sleeping well!
