How many of you out there watched the Royal Wedding? Wasn't Kate's dress just amazing?
I thought she looked stunning! since I had to be at work around the time the wedding started, I had to find a way to watch it at my school! Lucky for my the Today show was airing it online! It was perfect, when I found this out I packed up my lap top, got a huge cup of coffee and headed into work!
I had a lot of fun watching "The Wedding" with the kids in my program. They were just as excited as I was, and got just as into, if not more! It was a fun way to spend a Friday morning at work!
Last night for dinner Mark and I tried something different. We had decided that we wanted some sort of creamy pasta, but I am not huge on a thick cheesy sauce. With that in mind we compromised on a creamy spinach pasta sauce. I found the recipe on Spark Recipes. This website is a wonderful healthy recipe site. I have found many a good recipes there. Of course I did my little tweaks here and there, and Mark and I were pleasantly surprised at the taste of this sauce. We both decided this creamy spinach sauce was going to be a keeper!

What you will need:
One 10 ounce bag of frozen spinach (thawed)
1 cup chicken or vegetable broth (I used Maggi)
3 cloves of Garlic (I used 4)
1/4 cup evaporated Fat Free Milk
1/3 Cup Parmesan Cheese (I added an additional 2 tablespoons)
Salt and Pepper to taste
I also added, Parsley, Basil, a little garlic powder, and cayenne pepper for a little zip.
First things first, throw the thawed spinach, garlic and chicken broth into a sauce pan. Cook until the garlic is tender and the mixture is heated through.
Then dump the spinach mixture into a blender and puree until you get a nice smooth consistency. When your spinach mixture has reached the desired consistency return the mixture to your sauce pan.
Now add your evaporated milk, and your parmesan cheese. Let the mixture cook down, you do not want a lot of liquid. You also want the sauce to become slightly thick.
While your waiting for the sauce to thicken up start making your pasta and any other sides you would like. Mark and I made homemade garlic bread. We used whole wheat hamburger buns they. We spread butter on marks and loaded his with garlic, pepper and parmesan cheese. While mine was topped with olive oil, garlic, parsley, pepper, and cayenne pepper.
We simply stuck them in the toaster oven and waited for them to toast! If you do not have a toaster oven a regular oven would work just fine!
Once our noodles were done it was time to eat! Mark topped his pasta with Alfredo Sauce, our Creamy Spinach Sauce, and Parmesan cheese. I had brought some left over spaghetti squash that I then topped with our Creamy Spinach Sauce and a bit of Parmesan cheese.
How good does that look?
Overall it got a seal of approve, we even topped the garlic bread with the sauce! The sauce was that good!
For lunch today I had completely planned on having the left over sauce with the remainder of my spaghetti squash, however after a long run that just didn't sound good! I opted for a loaded yogurt bowl:
In the mix
1/4 cup Udi's Granola
a handful of puffins cereal
one 6 oz container Fage 0% greek yogurt).
On the side I had a rice cake topped with hummus and a thin layer of our Creamy Spinach Pasta Sauce! This lunch was out of this world and exactly what I was craving for lunch!
