On the account that I do not feel well at all, Mark and I decided to make dinner tomorrow! This way I will throughly be able to enjoy this new concoction we are going to try!
But I didn't want to leave you with nothing tonight. I mentioned earlier that when I am not feeling well, or simply in one of those moods where I am not myself I reach for recipes that are old and familiar. A few years back my Grandma presented me with a cookbook she had been working on for years. This was not just any cookbook but a compilation of some of the most loved family recipes! Many of the recipes in this cookbook were ones that I had grown up eating, they are the types of recipes that have fond memories pinned to them!
While I was eating my oddly concocted chicken noodle soup I was aimlessly flipping through this cookbook looking for a recipe to share with you all! Since soup is a go to when I am sick I am going to share with you Chicken Ravioli Soup. This was a staple go to meal on a busy week night, and always a welcomed favorite in our household. In college I would make this soup and one pot would feed me for weeks. It also freezes really well!
With out further delay I present to you Brian's Ravioli Soup:
Ingredients:
2 boneless, skinless chicken breast
2 10.5 ounce cans reduced sodium chicken broth
2 15 ounce cans diced tomatoes with garlic and onion (Del Monte)
2 small zucchini
1 25 oz package of fresh or frozen cheese ravioli
2 Teaspoons Dry Parsley
Grated Parmesan Cheese to top each serving with
4-6 Servings
What you do:
First get a pot of water boiling to cook your chicken breast in. While your chicken is place your broth, your drained tomatoes, and zucchini into a big soup pot and bring to a boil. Once your chicken is done shred each piece into bite size pieces and add to your big soup pot! Now it is time to add your ravioli. Once your ravioli is added simmer for minutes or until your ravioli is nice and tender. Stir in your parsley, grab your favorite soup bowl and enjoy!
As I am writing this post I can feel my mouth water, and I wish I had a bowl of this soup sitting right next to me!

Comfort Food!

Timeless Family Favorites
One of Those Days, and the Pictures I Promised!
Do you ever have those days where you just do not feel like yourself? I am having one of those such days today! I think part of it has to do with me not sleeping well. I tossed and turned all night! I also think I am coming down with something!
When I am having these types of days I always reach for comfort food! And as mentioned in the earlier post steel cut oats are my new comfort food. So it is now 11:30 and I have had steel cut oats twice today! Once for breakfast, and once for lunch and let me just say that both times they were amazing!
Here is what went into my lunch!
My lunch oats consisted of one cup Steel Cut Oats, 1/2 Banana, 2 strawberries sliced, a tablespoon of Granola, and one heaping tablespoon of peanut butter!
Here the oats are up close! And yes that is a duck bowl! I fell in love with these bowls the minute I saw them at Sur La Table. The duck bowl instantly takes me back to my child hood. When I was younger I had a plastic bowl with my name on it and 3 painted ducks, now that I am 24 I have a sophisticated all grown up duck bowl! Don't those oats look yummy?
Before I go I need to tell you that I am obsessed with the new granola I tried! I went out on a whim at the grocery store and bought a different brand granola. This was hard for me because usually I am pretty set in my ways when it comes to granola. I always buy the Bake House Granola. It is made in Bloomington Indiana and I have to say that nothing compares to it, unless I am at Cafe Patachou! Anyways the granola I bought was Udi's Natural Artisan Granola. They have a few different flavors but I decided to go with their Hawaiian blend!
This granola has great flavor, and great mix ins! Not only is the granola crunchy but there are huge chunks of pineapple, coconut and ginger toasted macadamia nuts! So good!
Now if you will excuse me I have to g make more oatmeal for the rest of my week! I seem to have eatin it all!
